| I made stew last night but I cheated, I used frozen soup vegys and hamburger. I have never used hamburger but this is 93 percent lean and it doesnt make good cheese burgers. I am going to have to figure out what to mix with it so that it is more moist, it just isnt any good for cheese burgers, sigh. The hamburger was frozen so it didnt break up into little tiny pieces, I cut it into pieces the size of stew meat. It was delicious, Its my lunch today, mmmmmmmm mmmmmmmm good! |

I got fancy today with lunch. Tuna with romaine lettuce, tuna, pickle, egg and mayo. But I threw in some of those grape tomatoes, something different. It was ok but probably will go back to my just plain old tuna, pickle, egg and mayo on bread:) in the future. So far it seems my romaine is not tainted. |

| Fried eggplant tonight. Slices of eggplant put in egg wash and then flour, I might do a double dip? I love it but only make it once in a blue moon, this is an exception as there is no blue moon tonight, tee hee. Already had roasted chicken from the store, gotta have my vegy! |

| I am making something new tonight. Baked chicken breast stuffed with dressing. My problem is, do I cook the stuffing first and then stuff the breast and then bake or do I stuff it with dry stuffing and add the wet ingredients in the pan and hope it reaches all of the dressing? I am using box dressing. With the juices I will make chicken gravy when it is all done and pour the gravy over the stuffed chicken. Okay, I have decided I will mix the spices with the bread and stuff dry and add the wet ingredients to the pan. I am out of flour so not sure of the gravy. I am going to make potato salad also. I am used to making it for many people but since it is just me and I have only 3 eggs....6 to 8 medium potatos, 3 eggs, 2 or 3? sour pickles, onions chopped, mayo, pickle juice, mustard and salt and pepper to taste. Mix it up and serve, delicioso! I will let you know how the chicken comes out! |

Here it is, it was delicious! I made the potato salad today, I used the new olive oil mayo. It is good but it needed more mayo, not really, I think it is because it is low fat that it seemed like it needed more.
What I did on the chicken was mix the dry ingredients for the stuffing and put it in the bottom of the dish, poured the wet ingredients on top and stirred. Put the chicken on top and baked. The positive about this way is that the dressing gets the chicken juice and it is all cooked at once. The chicken was very moist which probably has to do with the way it was cooked. I would highly recommend this recipe!

Got a new steamer and had hot dogs tonight. I wonder why they are so much better steamed. I was going to cook rice in it but didnt want the rice to smell like hot dog. Maybe later if I get hungry.
